C\u2019est pourquoi, depuis plus de vingt ans, producteurs et communaut\u00e9 locale travaillent main dans la main pour prot\u00e9ger ces ressources pr\u00e9cieuses et faire de la fili\u00e8re du San Daniele un exemple concret de durabilit\u00e9. Cet engagement pour l&rsquo;environnement est une pratique quotidienne : de la gestion des eaux us\u00e9es \u00e0 la r\u00e9duction des d\u00e9chets, de l\u2019utilisation d\u2019\u00e9nergies renouvelables \u00e0 la protection de la rivi\u00e8re Tagliamento, qui r\u00e9gule le microclimat unique de la r\u00e9gion. Ce choix allie tradition, responsabilit\u00e9 et innovation, permettant de concentrer la production sur la seule commune de San Daniele del Friuli, au sein de 31 \u00e9tablissements certifi\u00e9s, v\u00e9ritables <strong>bastions du territoire et de son identit\u00e9<\/strong>.   <\/p>\n\n\n\n<p>Pour <strong>Nicola Martelli<\/strong>, pr\u00e9sident du Consortium du Prosciutto di San Daniele, <em>\u00ab la durabilit\u00e9 est un engagement quotidien qui se traduit par des actions concr\u00e8tes et partag\u00e9es. De la r\u00e9cup\u00e9ration des mat\u00e9riaux au respect de la biodiversit\u00e9, nous \u0153uvrons pour que le Prosciutto di San Daniele demeure une excellence gastronomique et, en m\u00eame temps, un mod\u00e8le d&rsquo;harmonie environnementale. \u00bb <\/em><\/p>\n\n\n\n<p>Parmi les projets les plus significatifs figure la gestion des <strong>eaux us\u00e9es<\/strong>. Une station collective, constamment modernis\u00e9e et entretenue, collecte et purifie l&rsquo;eau des usines, garantissant ainsi le respect de la r\u00e9glementation et la qualit\u00e9 des processus. Ce syst\u00e8me a \u00e9volu\u00e9 au fil des ans, soutenu par les initiatives de producteurs individuels visant \u00e0 r\u00e9duire la consommation et \u00e0 am\u00e9liorer les pratiques de lavage et de d\u00e9sinfection. Le r\u00e9sultat est double : des environnements de production toujours sains et, parall\u00e8lement, un impact r\u00e9duit sur les ressources en eau locales.   <\/p>\n\n\n\n<p>Le Consortium a \u00e9galement choisi d&rsquo;investir dans la <strong>r\u00e9cup\u00e9ration du sel usag\u00e9<\/strong> et des saumures, \u00e9l\u00e9ments r\u00e9siduels cl\u00e9s du processus de production. Pendant plus de vingt ans, la gestion de ces mat\u00e9riaux \u00e9tait confi\u00e9e \u00e0 des installations d&rsquo;\u00e9limination contr\u00f4l\u00e9es, situ\u00e9es hors de la r\u00e9gion. Aujourd&rsquo;hui, gr\u00e2ce \u00e0 un syst\u00e8me innovant, ce qui \u00e9tait autrefois consid\u00e9r\u00e9 comme un d\u00e9chet est transform\u00e9 en ressource, r\u00e9g\u00e9n\u00e9rant et r\u00e9utilisant le sel pour de nouveaux usages, comme le d\u00e9givrage des routes ou d&rsquo;autres applications industrielles. Il s&rsquo;agit d&rsquo;un exemple concret d&rsquo;\u00e9conomie circulaire, d\u00e9montrant que m\u00eame dans un secteur ancr\u00e9 dans la tradition, il est possible d&rsquo;innover avec des solutions durables.   <\/p>\n\n\n\n<p>Parall\u00e8lement \u00e0 ces initiatives, les entreprises du secteur ont engag\u00e9 un processus d&rsquo;investissement dans les \u00e9nergies propres, les technologies plus performantes et la r\u00e9duction des \u00e9missions de CO\u2082. Un nombre croissant d&rsquo;installations choisissent d&rsquo;ailleurs d&rsquo;obtenir volontairement la certification. Plusieurs entreprises ont \u00e9galement install\u00e9 des syst\u00e8mes photovolta\u00efques pour l&rsquo;autoproduction d&rsquo;\u00e9nergie renouvelable, confirmant ainsi leur engagement \u00e0 r\u00e9duire leur impact environnemental par des actions concr\u00e8tes et mesurables. <\/p>\n\n\n\n<p>La protection de la rivi\u00e8re Tagliamento et du microclimat de San Daniele, \u00e9l\u00e9ments essentiels \u00e0 l&rsquo;affinage du prosciutto AOP, reste au c\u0153ur d&rsquo;une strat\u00e9gie tourn\u00e9e vers l&rsquo;avenir sans perdre de vue ses racines.<\/p>\n\n\n\n<p>Enfin, l&rsquo;attention port\u00e9e \u00e0 l&rsquo;environnement se traduit \u00e9galement par la r\u00e9cup\u00e9ration et la r\u00e9utilisation des d\u00e9chets. Tous les supports promotionnels mis au rebut, tels que les banni\u00e8res et les panneaux d&rsquo;affichage, ont \u00e9t\u00e9 r\u00e9cup\u00e9r\u00e9s et transform\u00e9s en sacs et autres accessoires artisanaux, pouvant \u00eatre r\u00e9utilis\u00e9s \u00e0 des fins promotionnelles. <em>\u00ab Chaque d\u00e9cision de production est guid\u00e9e par la conscience que le Prosciutto di San Daniele est originaire du territoire qui l&rsquo;abrite.
