Formation, tourisme et un impact \u00e9conomique de plus d\u2019un milliard d\u2019euros : les chiffres d’un secteur qui g\u00e9n\u00e8re une richesse sociale et culturelle pour la r\u00e9gion Frioul-V\u00e9n\u00e9tie julienne et pour l\u2019Italie.<\/em><\/p>\n\n\n\n

Pour le Consortium du Prosciutto di San Daniele<\/strong>, la durabilit\u00e9 ne se limite pas \u00e0 la protection de l\u2019environnement, mais englobe aussi et surtout la durabilit\u00e9 sociale et \u00e9conomique, un pilier fondamental qui place les personnes et le territoire au centre. Le \u00ab savoir-faire \u00bb, transmis de g\u00e9n\u00e9ration en g\u00e9n\u00e9ration, est en effet consid\u00e9r\u00e9 comme une ressource vivante qui garantit l\u2019identit\u00e9 du produit et sa continuit\u00e9 dans le temps. C’est pourquoi le Consortium investit constamment dans des programmes \u00e9ducatifs visant \u00e0 valoriser le capital humain, comme le montrent les donn\u00e9es les plus r\u00e9centes : 650 personnes participent<\/strong> aux activit\u00e9s de formation professionnelle destin\u00e9es aux op\u00e9rateurs du secteur, qui jouent un r\u00f4le essentiel dans le maintien des normes \u00e9lev\u00e9es de l’AOP. Cependant l’activit\u00e9 \u00e9ducative s’\u00e9tend bien au-del\u00e0 des limites des \u00e9tablissements, touchant les professionnels qui commercialisent le produit et le mettent sur les tables : 2 300 professionnels<\/strong> des canaux de distribution, du commerce traditionnel et du secteur HoReCa ont particip\u00e9 \u00e0 des sessions de formation sp\u00e9cifiques, 5 500 consommateurs<\/strong> ont pris part \u00e0 des masterclasses informatives et \u00e0 des ateliers de d\u00e9gustation au cours de l’ann\u00e9e 2025. <\/p>\n\n\n\n

Une diffusion capillaire de la culture du produit qui agit comme un puissant attrait vers les lieux de production, transformant les connaissances th\u00e9oriques en exp\u00e9rience directe. Le Prosciutto di San Daniele reste en effet un moteur essentiel pour le tourisme, tant au niveau local que r\u00e9gional. 32 % des visiteurs de San Daniele del Friuli recherchent des exp\u00e9riences li\u00e9es au jambon AOP.<\/strong> Un vif int\u00e9r\u00eat motiv\u00e9 par la recherche de visites guid\u00e9es et de d\u00e9gustations sensorielles guid\u00e9es, auxquelles s’ajoutent des activit\u00e9s de restauration dans les nombreux \u00e9tablissements du territoire. Ces int\u00e9r\u00eats g\u00e9n\u00e8rent un flux constant d’environ 160 000 touristes chaque ann\u00e9e <\/strong>dans la ville de San Daniele, ce qui cr\u00e9e ainsi un chiffre d’affaires direct pour les structures d’accueil et les commerces et confirme le r\u00f4le du secteur comme levier fondamental pour l’\u00e9conomie locale. <\/p>\n\n\n\n

L\u2019impact du Prosciutto di San Daniele AOP va toutefois bien au-del\u00e0 de la production et du tourisme, puisqu’il constitue un atout strat\u00e9gique mesurable. Selon les donn\u00e9es \u00e9labor\u00e9es par The European House \u2013 Ambrosetti<\/strong>, le syst\u00e8me San Daniele est en mesure de g\u00e9n\u00e9rer une valeur partag\u00e9e significative. Avec un chiffre d\u2019affaires \u00e0 la production de 360 millions d\u2019euros, le secteur g\u00e9n\u00e8re un effet de levier significatif : pour chaque euro de chiffre d’affaires g\u00e9n\u00e9r\u00e9, 2,2 euros suppl\u00e9mentaires<\/strong> sont activ\u00e9s dans l’ensemble de l’\u00e9conomie. Le secteur du San Daniele est donc capable de g\u00e9n\u00e9rer un impact \u00e9conomique total d\u00e9passant 1,15 milliards d\u2019euros<\/strong>. Une richesse qui se r\u00e9percute directement sur le territoire, en soutenant l’emploi, les fili\u00e8res et en contribuant au d\u00e9veloppement du syst\u00e8me national, preuve que l’\u00e9conomie AOP repr\u00e9sente un levier indispensable pour la comp\u00e9titivit\u00e9 italienne. Le San Daniele fait en effet partie int\u00e9grante d’un syst\u00e8me AOP national qui, en 2024, a d\u00e9pass\u00e9 les 20,7 milliards d\u2019euros de valeur<\/strong> : le secteur contribue de mani\u00e8re significative \u00e0 ce r\u00e9sultat, en soutenant les fili\u00e8res et les territoires d’origine des produits. <\/p>\n\n\n\n
